黑胡椒牛柳 Black Pepper Stir Fried Beef….uh sticks

Ah, the marriage of a European vegetable, a Mediterranean bulb, a Middle Eastern root, and an Indian spice. All done up as a perfect simple stir fry. It is like the Silk Road on a plate.

I love this dish, the combination of the “dark foreign spice”/pepper and the onion…and the beef…yum.  But don’t take my word for it try it yourself.

Ingredients

  • 8oz. beef cut into large, thick matchsticks
  • 1/2 onion cut into strips
  • 4oz. carrot cut into matchsticks
  • 40z. broccoli florets halved or quartered

Seasoning 1

  • 1 T. soy sauce
  • pinch of salt
  • 1 t. minced garlic
  • 1 t. corn starch
  • 1/4 t. baking soda
  • 1 T. oil

Seasoning 2

  • 1 T. ground black pepper (preferably fresh)
  • pinch of salt

Method

  1. Mix the cut up beef with “Seasoning 1” and let marinate for 30 minutes.
  2. In a large wok heat about 1/2 c. of oil until very hot.  Add beef and stir fry quickly until done.  Remove beef and set aside. Remove oil from wok.
  3. Add 2 T. oil to the wok. Turn heat to medium. Add the onions, carrots, and broccoli. Stir fry until nearly done.
  4. Add the beef back to the wok. Add “Seasoning 2” stir fry all together until all is heated through and the seasoning is evenly distributed.
